helping chris cook: pesto pita pizza
tonight's dinner had to be a quick one since peter had a soccer game at 9, and i didn't make it home from hemming up the flat bedskirts for the guest bedroom until 7. [more pics of the guest bedroom are coming soon, it's pretty close to being done! just a lot of finishing, touching up, and putting everything into place...]
anyway, i opted for pesto pita pizza out of my trader joe's cookbook.

pesto pita pizza
ingredients:
2 standard pita pockets [i used wheat]
4 tbsp pesto [you can find premade pesto in the sauce aisle in most grocery stores]
1/2 c shredded mozzarella [i used more than a quarter cup for each, but that's what the recipe calls for]
1 ripe tomato, diced
2 tbsp chopped fresh basil
1. preheat oven to 400˚ F
2. place pitas on baking sheet, lightly sprayed with cooking oil
3. spread 2 tbsp pesto on each pita. top with 1/4 c of cheese.
makes 2 pizzas
if you don't like pesto, use marinara/tomato/pizza sauce instead of pesto, and top with whatever you'd like.

4. bake for 8 minutes, until cheese is bubbly. [meanwhile, prep tomato and basil]
5. remove from oven and top with tomato and basil.
makes 2 pizzas

One of those pizzas looked a lot heavier on the basil. Let me guess whose that was.....haha!
